275/35 will sit taller than a 265/35, the Gold just pops a bit more than the Bronze. Tire compound will also be at play as certain Michelins tends to run a bit wide compared to other compounds and brands.
Most likely - The Brembos require the larger caliper clearance. It will have to be 19", as the dropcenters on the barrels are incredibly aggressive on the 3-piece variants.
You will get less torque-steer at a +55 compared to a +45; but aside from that it is just visual. Both will look good; a +45 would look less awkward in our opinion. There will not be considerable wear-and-tear on suspension and tire regardless of the offset you choose.
