that’s a LOT of water. I wonder if similar, significant cooling results can be achieved with less water. The STI reservoir is < 1 gal IIRC, but only for the intercooler, and intermittent spraying not continuous like your setup.

Heat checking is fine. On other two piece rotors I use for track, I replace when the cracks get to the outer edge. Never been an issue for me.
