Unfortunately, no. This is not because the car is a manual, but the way the Push Button Start operate and how the car is wired. In order for the infotainment to keep running after you press the Engine Start Button to turn the car off, the car must be designed in such fashion.
I don't think one would care about Distance-to-Empty (DTE) calculation at that point. Gas mileage calculation can be based on fuel flow rate, which may not be affected.

You are spot on. Not all manual transmission has synchronizer on reverse gear. If there is no synchro on reverse (sometimes it's just a reverse idler gear) and just go in there whenever, you can get a crunch when things don't line up.
