The available tunes are outlined on the application page for the vehicle and are also listed in the software. You have an Si and what you read was from someone who does not.

There's quite a few adjustments available that really change overall drivability. Throttle response, turbo response, turbo spool, rev hang, turbo ramp rate. Boost targets for normal and sport mode, boost limits by gear, ignition, fuel targets, and other options to control ECU functionality as well.

That's Short term and long term fuel trim. Long term 1 should not read -100 unless it's disabled and you don't have the ability to do so currently. LTFT1 does read correctly. I would assume you chose LTFT2 on accident, which will read -100 since you don't have two banks available.
You should see your vehicle listed and be able to follow what the tutorial videos show to open a basemap. If not, email support because you likely have an unsupported ECU.
Starter 21 is Stage 2 21, but allows you to make your own adjustments and does not have any adjustments pre-done for you. We did not release a Stage 2 21 dual option since you can't adjust the staged maps.
