For dailying I use the Sport gauges with CarPlay on the left and nothing on the right. I prefer less information so I can focus on driving. I used to be the opposite and just ended up compulsively checking my Accessport when it wasn't necessary.
An honest repair shop will list out all available options suitable for the customers needs.
OP I suggest you exercise some troubleshooting as @UCF120 suggested earlier rather than throwing money at it at first.

You don’t know the OPs goals/needs aside from getting their pops and bangs back, so blindly suggesting a custom tune is disingenuous.
Getting a custom tune is not the solution to his situation.
Have you tried the more aggressive pops settings? I found that I could barely hear the ITS setting and went one level above that (Stage 1) to hear anything.
This is with the stock exhaust and PRL HVI.

There have been clips floating around of PRL doing some CARB testing for their intake and intercooler, so it could possibly be CARB-certified in the near future.
